What’s the best grind size for pour-over coffee?
For pour-over brewing, we recommend a medium to medium-coarse grind, similar to coarse sand.
The most important thing is consistency rather than chasing a perfect setting. If your coffee tastes bitter, try a slightly coarser grind. If it tastes sour or weak, go a little finer. Small adjustments make a big difference.
Our coffees are roasted to be forgiving, so you don’t need to overthink it.
How fresh should coffee be after roasting?
Coffee is usually best from about 7 days after roasting and remains flavourful for several weeks after that if stored properly.
Very fresh coffee (just a day or two off roast) can taste unsettled or sharp. A short rest allows flavours to balance and sweetness to develop.
We roast with everyday drinking in mind, so our coffee is designed to taste good consistently — not just at a single “perfect” moment.
What’s the difference between natural and washed coffee?
The difference comes from how the coffee cherry is processed after harvesting.
- Washed coffees tend to taste cleaner and more bold.
- Natural coffees often taste fruitier and fuller/creamier.
Neither is better than the other. It’s simply a difference in character. At Cast Iron, we choose coffees based on balance and sweetness and how well they drink over time, not just on how expressive they are.
Why does specialty coffee cost more?
Specialty coffee costs more because more care is taken at every stage — from farming and harvesting to sourcing, roasting, and quality control.
Producers are paid more fairly, and roasters work with smaller volumes and tighter standards. What you’re paying for is consistency, traceability, and a better cup — not just rarity or trend.
We focus on making sure that extra cost translates into coffee you can enjoy every day.
What’s the best coffee for beginners?
If you’re new to specialty coffee, we recommend starting with a balanced blend, like our El Dorado.
Blends are designed to be approachable, forgiving, and versatile. They work well across brew methods and don’t require perfect technique to taste good.
Once you’re comfortable, single origins are a great way to explore different flavour profiles — but there’s no rush.
How do I store coffee beans at home?
Store coffee in an airtight container, away from light, heat, and moisture.
Try to avoid keeping coffee in the fridge or freezer once opened, as temperature changes can introduce moisture and affect flavour. But, this being said, you can store coffee in a freezer, but ensure that the bag is sealed properly and there is no moisture.
A cool cupboard and a sealed container are usually all you need.
How long does coffee stay fresh?
Whole-bean coffee typically stays fresh for 4–6 weeks after roasting if stored well.
After that, it won’t suddenly go bad — it just slowly loses aroma and complexity. We recommend buying amounts you’ll comfortably use within that window to get the best experience.

How should I choose between blends and single origins?
Choose a blend if you want:

Choose a single origin if you’re curious and want to explore specific flavours from a particular place.
Neither is better. They simply serve different purposes. At Cast Iron, blends form the backbone of our offering, with single origins as an option to go a little deeper when you feel like it.
How do I store coffee beans at home?
There is no sugar or sweetener in our blends, there is however a small amount of sugar in the flavouring used for our flavoured coffee.
